Deficiency Definitions (2 Dec 09)
Critical Deficiency - a condition or practice which:
- results in the production of a product that is unwholesome; or
- presents a threat to the health and safety of the consumer;
- exposes product to sources of contamination;
- compromises the assurance that food is processed under sanitary conditions.
Serious Deficiency - a condition or practice which:
- prevents proper plant sanitation; and/or
- may result in the production of a tainted, decomposed or unwholesome product, but which is not considered to be a Critical deficiency.
Minor Deficiency - a condition or practice which:
- may inhibit general sanitation; and/or
- is not in compliance with the requirements of Schedule I and II, but which is not considered to be a Serious or Critical deficiency.
