Dear Sir:

This is to inform you that the Canadian Food Inspection Agency has found clenbuterol residues in the retinae of calves slaughtered in a federally inspected establishment (Est. # [name and address of establishment]). Enclosed is a summary of the analytical results.

The presence of clenbuterol residues in the retinae of calves constitutes adulteration under the Food and Drugs Act and Meat Inspection Act. Please note that, from now on, you must notify us in advance by telephone, each time you ship calves from your herd to any of our federally inspected establishments, whether located in your province or in any other province.

In the event that the animals are sold through an agent or marketing officer or at an auction sale, please have the organization concerned communicate to us the location and date of shipment for slaughter purposes. The calves, when presented, will be examined before and after slaughter. They will be placed under detention and one (1) out of six (6) carcasses will be evaluated for the presence or absence of clenbuterol in the retinae and muscles. The holding and testing of your herds will continue until five (5) consecutive herds test negative.

Should the muscle sample tests positive, the corresponding carcass will be condemned. You will then have the choice of using an accredited laboratory to demonstrate that the muscle from the other members of the herd are free of clenbuterol residues or they will be condemned.

The Canadian Food Inspection Agency is concerned about the use of clenbuterol in food producing animals and intends to take all necessary steps to ensure that this practice is discontinued.
