Subject: Chapter 4 of the Meat Hygiene Manual of Procedures –Annex G: List of Accepted Starter Cultures

Please be advised that Annex G of Chapter 4 of the Meat Hygiene Manual of Procedures has been removed.

Chapter 4, Section 4.16 and Annex C have been revised to reflect the removal of Annex G.

Effective on the date of publication, manufacturers of starter cultures are not required to obtain a letter of no objection from the Canadian Food Inspection Agency. Operators are required to ensure that all starter cultures used are safe and suitable for the intended purpose.
