Poultry Traditional Inspection

1.0 Purpose

The purpose of this document is to provide guidance to Canadian Food Inspection Agency (CFIA) Inspection Staff on the procedures involved in traditional inspection of poultry.

This document is intended to be used in conjunction with other guidance documents as referenced in Section 3.0 since it is limited to information not included in these documents.

The guidance outlined below should be used when verifying compliance with regulatory requirements related to traditional inspection of poultry.

6.0 Operational guideline

6.1 Post Mortem Inspection/Examination

Operators of poultry slaughtering establishments may choose to operate under the following methods of post mortem inspection:

6.1.1 CVS Task 2.2.06 – CFIA post mortem inspection stations / on-line test areas (Poultry)

Use CVS Task 2.2.06 to verify compliance with the requirements for the CFIA post-mortem inspection stations, when triggered.

6.2 Traditional Inspection Method for Poultry

Under traditional inspection, a CFIA inspector inspects the carcass exterior, the abdominal cavity and the corresponding viscera of each carcass. Only one (1) station is permitted for operators of newly registered poultry abattoirs under traditional inspection.

Operators shall provide one (1) or more competent plant employees, referred to as a helper, who shall be positioned next to each inspector. As directed by the inspector, the helper shall:

Operators wishing to remove condemned poultry legs not under the direct supervision of the post mortem inspectors shall submit a proposal to the Veterinarian with supervisory authority.

6.2.1 CVS Task 1.2.11 – Application of water spray during slaughter (Poultry)

Use CVS Task 1.2.11 to verify compliance of water spray usage during poultry slaughter, as triggered.

6.2.2 CVS Task 1.5.03 Evisceration and Presentation Standards Written Protocol (Poultry MPIP & Traditional) and CVS Task 1.5.04 Evisceration and Presentation Standards Implementation (Poultry MPIP & Traditional)

Use CVS Tasks 1.5.03 and 1.5.04 to verify compliance with the presentation standards at the prescribed frequency identified in CVS.

The inspection staff monitors presentation compliance by performing presentation tests at each inspection station and on each evisceration line, and take appropriate action when the presentation standards are not met as per Appendix: Traditional Inspection Presentation Standards.

6.2.3 Line Speeds for Traditional Inspection

Failure by the operator to take effective corrective action may result in line speed reductions imposed by the Veterinarian in Charge.
